Tucked away in Inchicore on Dublin’s south side, beside Rascals Brewery, this small-batch operation does something no other distillery in the city can claim - they grow their own botanicals in the garden out back. The juniper, lavender, rosemary, and other plants that end up in your glass were picked from the soil just metres from the still.

The masterclass walks you through Stillgarden’s full range of gins, each with a distinct botanical character. You will learn how they develop recipes, how different botanicals behave during distillation, and why growing their own ingredients gives them a level of control that larger producers simply cannot match. The team here are passionate about their process, and the intimate setting means you can ask questions, smell the raw botanicals, and understand the journey from plant to pour.
