The Pearse Lyons Distillery sits inside the former Church of St. James in The Liberties, and the setting alone makes this worth the visit. Stained glass windows filter light onto copper pot stills. Depending on your ticket, you will sample between three and five expressions - Pearse Original, Distiller’s Choice, Founder’s Choice, a 12-year-old single malt, and the Ha’Penny 4-cask whiskey.
